Description
Sassafras is a medium sized tree of the laurel family (Lauraceae), native to Eastern North America. It has very fragrant leaves that were traditionally used to flavour root beer. Sassafras leaves can also be dried and ground to produce filé powder, which is a key ingredient in making gumbo and other Louisiana Cajun cuisine.
Sassafras trees are deciduous and cold tolerant, able to handle to -25C so is able to grow in all areas of New Zealand. Soil should be moist and free-draining, tolerating some shade. Sassafras is primarily dioecious (two-sexed) as well, so multiple plants would need to be grown for seed production (not necessary for leaf production though of course).

Germination Instructions
Soak the seeds upon receipt for a few days in warm water, then do a cold stratification period for 4 months with damp sand/perlite in the fridge. After this time, plant into rich soil somewhere warm and seedlings will emerge after a few weeks.
